Chickpea Curry 1 chopped onion
1 chopped garlic
oil
1 1/2 tbsp curry powder
3 tbsp ketchup
1 can chickpeas
1 c water
1 bouillon cube
chopped cauliflower
Fry onion and garlic, add ketchup and fry until oil separates. Add curry powder, chickpeas, 1 cup of water and bouillon cube. Simmer and meanwhile chop up cauliflower. Add to pan and cook until tender.
Serve over rice. (I usually skip this part for myself, but the kids get it.)
Variations - Add diced potato and more water. Add cooked chicken for some additional protein. This is also great with a side of chutney or sweet pickles or even cranberries. We have been also known to put a dollop of plain yogurt on top too.
